Best quality Chen Pi should be large, with deep-red scarfskin and white interior, the flesh is to be heavy in oils, it should have a dense fragrance and pungency. In general, old-aged Chen Pi is in a higher quality, with the aging process being 20 -65 years. It is also the reason why Chen Pi is called literally “the old peels”.
