Homemade Bone Broth

Homemade Bone Broth

The magic of home-made bone broth should become a staple in your day to day life for not only well being and life nourishing properties but also a sense of grounding and belonging. For those who have never had the privilege of trying bone broth you are up for a revolution in your culinary experiences. You will soon be aware that not only can it be consumed as a standalone but also a base for soups, sauces, stews, curries and just about any dish that requires a liquid. We may even encouraged that your herbs be either soaked in broth or consumed with the granules, for the exponential health benefits

Bone broth has made a huge resurgence with the whole paleo movement, but like all good things, bone broth has been with us since the beginning of time.  The added benefits of broth that it is a budget buster. You can utilise the bones from the meat you have consumed previously, which are free you can still ask your butcher for bones and they will be content to sell you some for a very low price.

Broth can be made from virtually any kind of bones including chicken, beef, pork, lamb, and fish. Bones contain all the nutrients needed in the body nutrition powerhouse. A good stock will be gelatinous after it has been cooled. Concentrated broth would have leaked or extracted loads of gelatin, and when cold will have gelatinous appearance.  Bone broth are said to contain 2 important amino acids, which are proline and glycine, in addition to many other minerals and collagen factors.

Glycine aids in wound healing and supports the release of growth hormones as well as supporting detox of the body. Proline tightens and builds cell structures which heals leaky guts, reduces the appearance of cellulite, and improves the strength of skin and vein walls. It is especially supportive for people dealing with digestive problems or gut flora imbalances.

Beef (and or chicken) Broth:

Keep it simple recipe with options

Several pieces of Grass feed Beef Soup Bones 2 – 2.5 kg

Option: 1.5 kg Chicken bones (any combination of backs, necks, and feet), 1kg. Beef bones (shin or neck)

Bag full of vegetable scraps (carrot peelings, onion tops, celery leaves etc. Don’t use brassicas or beets as they contribute an off-taste to the beef stock.)

Option: 2 small onions, peeled and quartered, 4 small carrots and 4 stalks celery cut into pieces, 1/2 bunch flat-leaf parsley, 1 bunch fresh thyme.

1 head roasted garlic, halved crosswise

Fresh filtered water: enough to cover

30 ml Apple Cider Vinegar

2-3 Bay Leafs

5 Peppercorn

One important factor to remember is that bone broth is versatile, nourishing and delicious.

Rinse and clean the bones under clean water. Pat them dry.

Roast the bones at for about 45  min to an hour until the bones are well-browned and fragrant. Roasting the bones ensures a good flavour in the resulting beef stock. Not essential but may lend a sour taste to the end product if not.

Add the bones to a big pot or slow cooker along with any vegetable scraps you might have. Avoid using cabbage, broccoli, turnips, sprouts as these vegetables will make broth bitter. Instead use garlic, leeks, mushrooms, onions, carrots and celery add great flavour.

Add filtered water to cover and bring to a boil. Once you have brought the water to a boil, add the apple cider vinegar (help draw the nutrients from the bones) and herbs.

Turn down the heat and continue to simmer for several hours. I usually simmer mine about 24 hours. If using gas or cook top move pot so burner is off to one side, as this will help broth circulation

Throughout the cooking process, you may want to skim off any foam and add water as needed.

When the stock is finished simmering, filter through a fine mesh sieve and bottle in mason jars. The stock should set just like gelatin, and the fat should rise to the top.

Once again some may pick off the fat when it cools you may leave or collect and reserve it for cooking, then scoop out the gelled stock and reheat to serve as soup.

Drink immediately, or let cool before storing. Makes. Note that it’s wise to serve this stock hot as it may gel again once it cools.

Seasoning the stock

Seasoning should be done near the end of the cook time or you can wait to season your stock as you use it in recipes.

Add fresh herbs and spices in the last 10 minutes.

Dried herbs and spices or spice powders can be added during the final hour.

Vegetables can be added according to their size, giving them enough time to cook.

Try turmeric or fenugreek powder for soups and straight broth, oregano, ground fennel seeds, or even a little nutmeg for stews and gravies.

Storing your stock

After your stock is cooked, it’s a good idea to cool it quickly because bacteria will multiply rapidly.

Putting the hot pot directly into the refrigerator will raise the refrigerator temperature to unsafe levels for food. Instead, take the whole pot and put it in a sink filled with cold water.

After it has been cooled, separate what you plan to use right away and put it in the refrigerator. It will keep for about a week. Use the smell test. If it smells good, it should be fine. If you’re not sure, re-boil it to kill any bacteria.

Store the rest in the freezer. If you’ve made a very large pot, it’s convenient to store the remainder in one cup portions so you can defrost them as needed.

Master Winter Tonic

Benefits of the “Master Tonic”12669721_1110319842341025_2762615236024923652_n

Just wanted to share some of my thoughts on how powerful this tonic is!

This tonic is a “super cleansing tonic”, a powerful antibiotic destroying both gram-positive and gram-negative bacteria. It’s a potent anti-viral and anti-fungal/yeast formula. The super tonic will increase blood and lymph circulation to every part of the body. It is so effective that it is said to be the cure for colds and flu! The herbal preparation can also be used as a formulation against Candida.

Benefits of each Ingredient

Garlic is a well known and used broad spectrum antibiotic which in contrast to prescribed antibiotics, will leave friendly bacteria alone. Garlic will promote and increases healthy gut bacteria and is a wonderfully powerful anti-fungal. Onion has a similar, but milder action to garlic but together can work synergistically.  Horseradish is a persuasive vegetable for opening and clearing the sinus and lungs. Whilst Ginger and Turmeric contain some really powerful anti-inflammatory properties. Cayenne and hot chilies are powerful circulatory propellants. Apple Cider Vinegar (ACV) for its health giving qualities, too many to mention here, keep a tune for another write up for the virtues of ACV.

Ingredients and Directions: Always use organic and as fresh as possible:

Organic Apple Cider Vinegar12592348_1110319919007684_5372215537890258044_n

¼ lemon ¼ lime

Dried Cinnamon 2 sticks

Dried chilli flakes12645095_1110319905674352_3552159946684747657_n

Ground cayenne pepper

Black, white and red peppercorn

Best to make on the day of the New moon

Slice, Chop, grate or blitz Ingredients: More processing will lessen time for soaking no rules on the size you cut

Massage ingredients (with gloves)

Place the ingredients into contains12647008_1110319932341016_3049945476366336962_n

Pour Apple Cider Vinegar until all ingredients are submerged

Leave it in a dark place until the Full Moon (14 to 28 days) or as long as needed, as longer brewing will result stronger potent mix.  Agitate the mixture when possible

Strain and bottle, store in a dark corner for as long as needed, Master Tonic lasts indefinitely.

Notes: Left over ingredients can be dried and made into powder for a master tonic spice or great for soups. You can store the tonic in a cupboard for extended periods, there will be no need to refrigerator. Left overs can also be mixed with olive oil for a salad dressing or even thrown into stir fry.

Recommended Usage:

For sore throat, gargle a bit in the mouth and swallow. For an illness, such as a cold or flu, take about 2 droppers full or a Tablespoon every couple of hours. For daily immune support drink 2 droppers full/ 1Tablespoon every day. Build up tolerance to a shot glass full.

The biggest obstacle is the initial tasting, general advice is to start off small and build up to a small glass full. Now make a “prepared it myself” badge and be proud that you are looking after your own health.

IRON : Bеnеfіts, Absorption and Fооd Ѕоurсеs

IRON: Benefits, Absorption and Fооd Sources

Iron (Fe) is an essential element for the production of blood and is found in red blood cells called haemoglobin. Haemoglobin transports охуgеn in your blood from the lungs tо all parts оf the bоdу. All living organism require іrоn аs аn essential element fоr growth and plays an important role in the body for the production of energy. Tiredness and fatigue are symptoms of Fe dеfісіеnсу which іs a соmmоn nutritional problem.

The average person needs about 1 mg for adult males and 1.5 mg for menstruating females. The body absorbs only a fraction of iron consumed so you need to eat several times that amount. The Australian Recommended Dietary Intake (RDI) for iron is the amount of dietary iron required for the general population which differs between gender, age groups and life stages. For example, pregnant women need 27 mg of iron per day whereas the rest of the population need between 8-18 mg of iron per day.

Іnсrеаsеd іrоn absorption occurs  іn normal people during menstruation, pregnancy, puberty, аftеr blood loss and if the bоdу’s iron stores аrе dерlеtеd.

There are two types : haem iron and non-haem iron. Haem iron is readily absorbed and found in meat, poultry and seafood. Non-haem Fe is less well absorbed and found in plant foods and eggs.

Good sources include: iron

Meat and poultry: lean beef, lamb, chicken, turkey and pork; Offal

Seafood: shellfish, fish and mussels;

Vegetables, pulses and nuts: broccoli, spirulina, leafy greens, tomatoes, potatoes, beetroot, quinoa, cashews, chick peas, beans and tofu.

Vitamin C can increase the absorption found in plant foods if taken at the same time and some good sources include citrus fruits, strawberries, tomatoes, broccoli, spinach and cabbage.

Excessive consumption of regular tea, herbal teas and coffee can also reduce iron absorption however this effect can be decreased by including sources of Vitamin C that enhance iron absorption into your diet.

Zinc – Deficiency Symptoms and Health Benefits

Zinc – Deficiency Symptoms and Health Benefitszinc

Zinc (Zn) is an important mineral, which is essential for protein synthesis and helps to regulate the production of cells in the body’s immune system. It is mainly found in the muscles. Zinc is also found in high concentrations in red and white blood cells, the retina of the eye, bones, skin, kidneys, liver, and pancreas. In men, the prostate gland and semen (zinc is one of its constituents) store high amounts of zinc.

More than 300 enzymes in the human body require zinc for normal functioning. It is believed that around 3000 out of the 100,000 proteins involved in human life contain zinc. Our body contains about 2-3g of zinc.

Many organs of the body secrete zinc, including the pancreas, the salivary gland, and the prostate gland. Immune cells also secrete zinc.

Benefits  –

– Vital to many biological functions such as immune resistance, digestion, reproduction, physical growth, diabetes control, appetite, stress level, taste and smell.

– It helps maintain normal taste and sense of smell, aids in wound healing, promotes normal foetal growth and boosts immunity. By boosting the immune system,  also helps protect against fungal infections and various infectious disorders, such as conjunctivitis and pneumonia.

– Functions as an antioxidant and is involved in many decisive biochemical reactions, including enzymatic function, carbohydrate metabolism and protein synthesis.

– It plays an important role as a component of many enzymes regulating cell growth, DNA and protein synthesis, energy metabolism, regulation of gene transcription, hormonal levels in the body etc.

– It is required for fighting skin problems such as acne, boils and sore throats.

– It is also used as an astringent and an antiseptic for skin protection.

-Especially important for the prostate gland in males, and protects it from early damage that could lead to cancer.

– Promotes normal growth and development during pregnancy, childhood, and adolescence (sexual development).

What foods are rich sources of zinc?

products containing zinc

High-protein foods contain high amounts of zinc. Good food sources for vegetarian people include dairy products (milk, curd, and yoghurt), beans and lentils, peanuts, peanut butter, seeds, fortified breakfast cereals, and wholegrain cereals. Pumpkin seeds are considered to be one of the most concentrated vegetarian dietary sources of zinc.

Dietary fibre (phytates, found in cereals, legumes) can interfere with the body’s ability to absorb zinc. Zinc is best absorbed by the body when taken with a meal that contains protein.

Red meat and poultry also provide good sources of zinc. Zinc absorption is greater from a diet high in animal protein than a diet rich in plant proteins. Thus, fruits and vegetables are not good sources of zinc.
Cooking helps reduce the adverse effects of both phytic acid and dietary fibre on zinc absorption.

Is excess zinc harmful?

Too much can be harmful to the human body. Excessive absorption  into the human body can lead to reduced iron function, and damage the immune system. The major adverse outcome of long-term consumption of excessive zinc is copper deficiency, along with stomach ache, nausea, mouth irritation, and a bad taste.

Deficiency of  –

Zinc deficiency most often occurs when intake of zinc is inadequate or there is poor absorption by the body, or when there is increased excretion of zinc from the body, or when the body’s requirement for zinc increases.

Zn is excreted through the faeces, urine, hair, skin, sweat, semen and during menstruation. Liver and pancreatic disorders, chronic alcoholism, diabetes mellitus, and absorption disorders lead to zinc deficiency.

Men should always make sure of sufficient quantity of zinc in their diets, since the health of their prostate gland is linked to zinc. Zinc is needed to manufacture testosterone and a shortage may induce a low sperm count, loss of libido.

Signs of deficiency:

Symptoms of deficiency include hair loss, skin eruptions, diarrhoea, degradation of body tissues, and, eventually death also.

Since a person’s vision, taste, smell and memory are all connected with proper levels of zinc in the body – a deficiency in zinc causes faulty working of these organs. Deficiency of zinc may lead to poor night vision, falling hair, white spots under fingernails, skin problems, sleep disturbances, reduced wound-healing, decreased appetite, a decrease in the sense of taste and smell, a reduced ability to fight infections, and poor development of reproductive organs.

Zinc deficiency can also lead to immune system dysfunction and stunted growth, impaired male fertility along with hormonal imbalance. Women may experience irregular menstrual periods, while males may have slow sexual maturity.

Zinc deficiency is common in people infected with the HIV virus or suffering from AIDS.
Zinc levels are also low in people with diabetes, particularly type 2 diabetes.
People with anorexia and bulimia are often deficient in zinc.

Children with ADHD (attention deficit hyperactivity disorder) tend to have lower blood levels.

We hear very often the term probiotics. But still, what are they more exactly? Are they that good as some claim they are? Probiotics are actually live bacteria, which is good because it helps us balance some processes that take place in our organism. So even if we are used to thinking that bacteria are dangerous, probiotics will never harm us. It is not mandatory to take probiotics, as we can live without them, but their presence will help us in a great deal. Thus, there is no reason to avoid probiotics. For instance, two of their primary goals are the increase in the efficiency of our digestion and protection against the bad bacteria.

So probiotics are good for our organism, but how do the act? In many cases, the foods we eat and even medical treatments we follow may derange the balance of our intestinal flora. Antibiotics, for instance, are known for killing good bacteria, together with the harming bacteria, because it cannot target a particular group. Thus, it is not uncommon to suffer from diarrhoea after taking antibiotics. Replenishing the number of probiotics will prevent that from happening and even cure it, in case it already occurs.

In women, vaginal yeast infection and even urinary tract infections occur when the number of damaging bacteria is higher than probiotics. The result being the previously mentioned conditions. In the lack of a proper defence system, harming bacteria that cause these infections will take over, causing the unpleasant symptoms associated with them.

Because they aid digestion, probiotics have the ability to calm down the irritable bowel syndrome. In this case, a helping hand that will make food digestion easier is more than welcomed. Do you suffer from an infection of the digestive system? Well, probiotics will assist by speeding up the treatment you take for curing the condition. Thus, your recovery will take place in a shorter period, and unwanted symptoms will be reduced. And these good bacteria are great to fight against the seasonal flu and cold. They can either keep it away or reduce its severity if it takes place, just because they can do a great job in fighting unwanted bacteria and viruses.

You should know that there are several types of probiotics, each of them having its own benefits. Some may be found in particular foods while some are provided in the shape of supplements.
